Paleo Dark Chocolate Cake With Frosting Recipe

I felt like baking today and was craving chocolate so I came up with this cake, and I must say it came out really good! This recipe calls for the canned coconut milk to be refrigerated overnight to allow it to separate.

Paleo Dark Chocolate Cake With Frosting

3 tbsp coconut flour

1/2 cup dark cocoa powder

1/2 cup almond butter

1/4 cup grape seed oil or coconut oil

1/4 cup almond milk

1/2 cup honey or coconut nectar

3 tbsp softened coconut butter

1/4 cup coconut crystals

4 eggs

1 tsp baking soda

1 tbsp vanilla

1 tbsp cinnamon

For Frosting

1 can coconut milk, refrigerated overnight

8 oz dark chocolate bar

1 tbsp vanilla

3 tbsp honey

1 tbsp dark cocoa powder

Pre-heat oven to 350 degrees. Grease a round cake pan with coconut oil.  With a blender mix all ingredients for the cake and pour into back.  Bake for 25 minutes.  While that is cooking prepare your frosting.  When your canned coconut milk is refrigerated overnight it separates, and the water sinks to the bottom.  The top is the cream of the coconut.  Use that for the frosting and you can drink or throw away the water. Mix the rest of your ingredients with a hand mixer and refrigerate. When cake is done, cool completely and frost. Enjoy!
