Paleo Sweet Potato Casserole Recipe

I recently picked up a 16lb turkey for $8! Nothing goes better with turkey than sweet potatoes, and this came out really good paired with some steamed broccoli.

Paleo Sweet Potato Casserole Recipe

For Potato Mixture

2 large sweet potatoes, baked

1/4 cup honey

1 can coconut milk

2 eggs

1 tbsp vanilla

1 tsp cinnamon

Topping

1  1/2 cups pecans

1 cup almonds

3 tbsp coconut sugar

3 tbsp coconut butter

1 tsp cinnamon

1 tbsp vanilla

Bake your sweet potatoes on 350 degrees for about 1.5 hrs till soft. Peel off the skins and in a medium size bowl mix you honey, coconut milk, eggs, cinnamon and vanilla.  Pour mixture into a casserole dish. To prepare your topping, mix the pecans, almonds, coconut sugar, coconut butter, cinnamon, vanilla in a food processor until coarse. Then drop pieces onto the top of your sweet potato mixture.  Drizzle honey on top. Bake in oven on 350 degrees for about 45 minutes till top is golden. Enjoy!

Easy Paleo Creamed Kale Recipe

I had a lot of kale left over and really didn’t feel like eating broccoli with our steaks for dinner, so I decided to try something new. Kale is very high in Vitamin K, A and C and is the #1 leafy green vegetable. It’s that good for you! I’m definitely going to be making this at least once a week now to replace broccoli that we eat pretty much every day.

Paleo Creamed Kale Recipe

As much Kale leaves as you want or have

1 can full fat coconut milk

sea salt

coconut butter

Optional Ingredients- Cooked bacon pieces, sauteed mushrooms, sauteed onions and/or minced garlic

In a saute pan melt a few tablespoons of coconut butter over medium heat and add in your Kale leaves.

Cook for about 5 to 1o minutes until it’s soft. Then add your can of coconut milk.  Don’t worry if it’s too much milk for the mixture, it’s just for taste and the milk doesn’t need to thicken. Cook for a couple of minutes and you are all done! To change it up you can add cooked bacon pieces, sauteed mushrooms, sauteed onions and/or minced garlic . Enjoy!

Paleo Bacon Butternut Squash Soup With Chorizo Recipe

IMG_1602The weather is cold outside and there is nothing like a good bowl of soup to make you feel all nice and warm. The spices from the chorizo give it a little kick, but it’s not too spicy.  I don’t like spicy food and I loved the way this came out! If you want more of a kick add the red pepper.

Bacon Butternut Squash Soup With Chorizo Recipe

1 package all natural Chorizo

1 package nitrate free bacon

1 large butternut squash

kale leaves

2 tsp crushed red pepper (optional if you like it really spicy)

1 large yellow onion

1 can full fat coconut milk

11 cups water

Boil 11 cups of water in a large soup pot. While that is boiling peel your butternut squash with a potato peeler and sharp knife, cut off the ends, scoop out the middle and chop into bit site pieces.

Boil for 30 minutes till soft. While that is boiling chop your onion and cut your bacon into bite size pieces. Cook together on medium to high heat for about 30 minutes until bacon is crisp. If you want it extra spicy add you red pepper when it’s almost done cooking. Pour your bacon/onion mixture with the bacon fat into your soup mixture once your squash is soft. Then take the casing off the chorizo and cook over medium to high heat for about 8 minutes. When that is done, pour all of that into the soup mixture. Then add your can of coconut milk and stir over low heat. While that is mixing, rinse your kale (use as much or as little as you like), and tear pieces of it and add in your soup. Cook over low for 5 minutes and you are all done. Enjoy!

New Years Resolutions!

newyearHappy New Year!  It’s that time of year again where people make resolutions and gyms are packed full of people destined to make this year different from the previous year. I  guess you can say I also make resolutions, but mine are always the same.  Eat better exercise more.  It’s the same thing every year.  But this year I decided to do something different.  I made it a little more specific and am adding 2 more classes to my weekly classes at the gym. I do body pump 3 times a week along with running either outside or on the treadmill depending on the weather and now I’m adding a boot camp class and a cycling class.  I’m hoping this will help me in my struggle to lose this baby weight! I have been stuck in a rut and the holidays haven’t helped.  I lose a few pounds then the holidays came and I gained them back.  Oh well, I can’t dwell on it, now it’s time to live in the present.  I want to be a good role model to my daughter and be an inspiration to others that it may take a while, but it can be done.  Seeing celebrities who within 3 months have lost all their baby weight is discouraging, but we must not dwell on it.  As long as you haven’t given up and you are continuing to make better choices about what you eat and still continuing to work out, then you haven’t lost the battle.  If you have lost the battle, then don’t lose the war and get with it again. I think people try to do things drastically and it’s too much all at once and they get discouraged and quit. When you make small changes and continually add on more things a few months later it becomes a habit and eventually a full lifestyle change. Don’t “diet”, lose a lot of weight then when you hit your goal go back to your old way of eating, that’s why people gain all their weight back! Continually make changes to better yourself, towards that lifestyle change. Good luck on your journey and I hope to update you guys in a few months with better progress!

Review: Brads Raw Leafy Kale Chips

bradsWhole Foods had a lady giving samples of these the other day and it was pretty good. I didn’t try them all because I am not into eating spicy things, but I bought the Pina Kale-Ada flavor.  They cost about $6 each, and are probably only good to you if you like kale chips.  If you aren’t into kale chips, then you probably won’t care for these very much. They are crispy and the Pina Kale Ada flavor had a good sweet flavor to it. They are gluten free, all natural, Non-GMO, and vegan. They were very good, but considering the price, I probably won’t be buying these again.

Review: Paleo Snack, Dang Coconut Chips!

I saw these at Sprouts and had to try them.  I am so glad I did!  I bought the caramel sea salt flavor for $2.29, which isn’t too bad for a good snack.  The ingredients are Coconut, Coconut Sugar and Sea Salt. They are all natural, vegan, Non-GMO, Gluten free, Dairy Free, Egg Free, have no cholesterol and are a good source of fiber. The whole package is 220 calories, with 6 grams of fiber and 14 grams of sugar.  Probably a little high on the sugar side, but a great treat when you want to eat something sweet.  These are so addicting, I ate the whole bag in one sitting!  My poor husband didn’t even get to try them, sorry sweetie, I will buy some more tomorrow.  This is definitely something I’m going to continually buy, these are great especially when you are traveling. The toasted coconut tastes like butter and the mixture of the sugar and salt, ah, I want some more right now!  If you enjoy eating coconut I promise you will love these!!! These would also make a great topping for any dessert recipe! They can be found in the nut section. Seriously, they are amazing!!! It’s like eating candy again!

Paleo Thanksgiving Stuffing Recipe

IMG_1498Last year our Thanksgiving was 100% gluten free and 80% paleo.  We had cornbread stuffing and broccoli and rice casserole that we didn’t want to give up. This year we plan to do the same thing, because my immediate family eats this way.  It’s also a good way for other extended family that comes over to realize that you can eat healthy and it still taste really good. This is something I made to test how it would come out to see if I would make it next week for Thanksgiving.  I have to say, I think it came out really really good.  If you are in to sweet and salty mixed into one then this is just for you.  I’m so addicted to it now! I think I’m going to scramble in a few eggs with this tomorrow for breakfast.

Paleo Thanksgiving Stuffing Recipe

2 lbs Ground Italian Pork Sausage

1 Package Nitrate Free Bacon

4 Stalks of 1 Celery

2 Sweet Potatoes, Diced

1 Large Yellow Onion, Chopped

1 Cup Diced Portabello Mushrooms

2 Pink Lady Apples, Diced

1 Cup Dried Cranberries

6oz Chopped Walnuts

1/4 Cup Chicken Broth

Honey

Cinnamon

Olive Oil

Salt

Pepper

Prepare and dice all your food before you start to make it easier. Preheat oven to 375 degrees. Put your sweet potatoes on a baking pan, drizzle with olive oil and season with cinnamon, salt and pepper. Cook for 20 mins just to soften a bit. While that is cooking, cook your bacon in a large skillet on high heat, when it’s about halfway cooked, add your chopped bacon and cook until bacon is crispy. Then add your chicken broth to this mixture. While that is cooking add your mushrooms and celery into a food processor and blend until its a paste mixture. When sweet potatoes are done cooking, pour into a casserole dish and add you dices apples, then drizzle lots of honey on top. Spread your mushroom paste mixture on top and then add you sausage mixture on top of that. Your last layer is your walnuts and cranberries sprinkled on top. Then drizzle more honey on top of it all. Bake on 375 degrees for about 20 minutes until your walnuts are light and toasty.  Enjoy!!!

Did I Just Cure My Ulcerative Colitis By Eating Paleo?

nodiseasejpgIf you haven’t read the”about me”  section at the top of my site, you can read it here. It basically sums up my struggles dealing with ulcerative colitis and being able to control it by eating better.  A few days ago I had a routine colonoscopy to see how I am doing.  I was told when I was first diagnosed that I had an increased risk of colon cancer and I would need a colonoscopy every 5 years to keep an eye on things.  For the past 3 years I have been 100% gluten free and for the past year have been 80% Paleo.  Since eating better, I have not had any flare ups, and have not taken a single pill.  My twin brother who also has the same problem and also eats Paleo experiences the same results as I do.

This was going to be my third colonoscopy and I was a little nervous/excited/anxious to see what the procedure would show. When I woke up from the procedure I was ecstatic to hear the news. The doctor said I have no signs of ulcerative colitis and whatever I am doing is working.  Of course, he can’t officially say “I am cured, or you cured yourself”, because what may work for one person may not work for another, and plus where would GI docs be if everyone controlled their problems with their diet.  So instead he said, “I am in remission.”  Either way, I am very excited to spread the news, that this could work for other people struggling with ulcerative colitis, IBS, or even Chrohns Disease, and it is worth a try.  If it doesn’t work, then what’s to lose, a few weeks of eating healthier is not going to kill anyone.  I’m not saying this is a cure, because more tests and more people would need for it to work in order to say this is a way to cure people, but hey, if you are struggling like I was, I strongly urge you to make changes and go gluten free and/or eat Paleo!

13 Lies We Have Been Told About Food!

My brother sent me this article that was pretty interesting and just reiterated what we already have been told on our Paleo Journey.

1.  Eggs are bad for you- Remember that commercial with the jingle, “The Incredible Edible Egg?” Well they are exactly right, eggs are so good for you! They are a great source of protein, vitamins, minerals and choline, which people don’t get enough of.  They don’t increase heart disease and can even help you lose weight!

2.  A calorie is a calorie- People pay too much attention to calories.  Think of it this way, a 2000 calorie of 10 donuts a day, is not the same as a 2000 calorie of healthy nutritious food. A diet of donuts messes with your hormones and your metabolism. You are much better off eating a diet of meats and vegetables, and trying to eliminate all chemicals and keep it all natural.  Eating protein can boost your metabolism and keep you full so naturally you won’t eat as much.

3.  Saturated fat is bad. Many recent studies are now showing that saturated fat increases heart disease. It helps raise the good cholesterol and change bad cholesterol.

4.  Eating a lot of protein is bad. Studies have been shown that healthy individuals who eat a lot of protein reduce their chances of developing diabetes and high blood pressure.

5.  Everyone should eat “whole wheat”. Wheat is full of gluten and many people don’t realize how great they can feel when they eliminate gluten from their diet. I believe everyone should cut gluten from their diet for 2 weeks just to see how amazing they will feel.

6.  Coffee is bad for you. My husband and I don’t drink coffee.  We just can’t stand the smell of it and it grosses us out.  My sister, who was shocked to hear we don’t drink coffee asked us once what we did when we were tired.  We told her we went to sleep.  That’s probably why we go to bed so early.  I had a 3rd grade teacher once who had really bad coffee breath and it grossed me out so much, that I can’t stand the smell.  Coffee is full of antioxidants but it becomes bad when people add sugars and chemicals to their coffee to make it taste better.

7.  Meat is bad for you. The problem is people are eating too much processed meats.  Processed meats are full of nitrates which has been shown to cause cancer.  People need to eat nitrate free processed foods and unprocessed red meats.

8.  The healthiest diet is a low fat, high carb diet. Studies are now showing that the low fat, high carb diet can be harmful to people with metabolism problems or people with diabetes.

9.  Vegetables oils are healthy. Vegetable oils contain too much omega-6 fatty acids which can play a role in many diseases. Stick with olive or coconut oil, which are low in omega-6 and extremely good for you.

10.  Low carb diets are harmful. Study after study has been shown that low carb diets is the most effective way to lose weight and fix metabolic problems.

11.  Cut back on sodium. Cutting back on sodium does help reduce blood pressure for people who have high blood pressure to start with, but if you don’t have any problems cutting back on sodium won’t improve anything. The biggest foods that have too much sodium are processed foods, so as long as you stay away from that, you don’t have to worry about your sodium intake.

12.  Sugar is bad because it’s “empty” calories. As I talked about before with the donuts and the calories in them, you shouldn’t stay away from sugar because it is high in calories, but you should stay away from it because of what effects it can have on your metabolism.

13.  Fat makes you fat. Many studies have been shown diets high in fat and low in carbs leads to much greater weight loss than diet low in fat and high in carbs.
