Paleo Mongolian Beef Recipe

Who doesn’t love Mongolian Beef, and for it to also be Paleo is awesome, considering how good this came out! I will definitely be making this a lot! This is one of my husbands favorite meals. Pair with broccoli and you are set for dinner.

Paleo Mongolian Beef Recipe

1 lb beef flank steak

1/4 cup arrowroot starch

salt and pepper to taste

1/2 cup melted coconut oil

1 tbsp minced garlic

1 tsp ginger

1/2 tsp red pepper flakes

2 tbsp olive oil

1/2 cup coconut aminos

1/2 cup chicken broth

1/4 cup honey or coconut nectar

2 tbsp xantham gum (helps thicken sauce)

4 green onion slices

Cut the steak into small pieces. Pour your arrowroot starch into a small bowl and season with salt and pepper to taste. Dip each piece of meat into your flour mixture and let it sit aside so it sticks better. To make your sauce, heat 1 tbsp of olive oil and a large sauce pan over medium heat. Add your garlic, ginger, and red pepper and cook for about a minute.  Add the rest of your olive oil along with the coconut aminos, chicken broth and honey. Then add your xanthum gum. Cook on high for about 5 minutes until sauce thickens. Set pan aside.  In a separate sauce pan heat over medium heat and add your coconut oil. Slowly add your beef and cook for about 1 minute on each side and cook until edges are lightly brown. Add your sauce into your meat and cook for about 4 more minutes then add your green onion and cook it all together for a minute. Enjoy!
